Islak Hamburger (wet burger)

Ingredients:

  • 200 grams ground beef
  • 1 small onion( grated and drained)
  • 1/2 egg
  • 1 tsp ketchup
  • Bread crumbs
  • Salt, pepper, garlic powder and oregano

Ingredients for sauce:

  • 1 Tbs oil
  • 1 small onion( finely chopped)
  • 2 garlic cloves
  • 1 cup tomato puree
  • 2 Tbs tomato paste
  • 3-4 Tbs ketchup
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • Black pepper and oregano

Instruction:

Soak some cooking paper in cold water and set aside. Prepare burgers and sauce. Spread tomato sauce on bread, burger and on the top of burger buns. Place wet papers in pot, put burgers on it, cover and let it steam on low heat for 8-12 minutes.

Kofte In Tomato Sauce

Ingredients:

  • 350 grams minced beef
  • 1 onion, 1/2 bell pepper grated and drained
  • 1/3 cup chopped parsley
  • 1 small egg
  • 3 Tbs bread crumbs
  • Salt, pepper, paprika, garlic powder, coriander powder, sumac, turmeric, oregano
  • Mix all and knead well.
  • Ingredients to add in tray:

  • Tomatoes
  • 1 Bell pepper(you can use1/3 of three different colours)
  • Garlic
  • Salt, pepper and cumin powder
  • For sauce:

  • 4 Tbs tomato paste
  • Juice of 1 lime
  • 1 cup of water
  • Instruction:

    Add vegetables to pan, place kofte on vegetables, bake in preheated 200°c oven, after 20 minutes flip the kofte, add hot tomato sauce and bake until the sauce is thick.

    Dall

    Ingredients:

  • 2 cups masoor daal
  • 1 Tbsp oil
  • 2 medium onions
  • 2-3 green onions
  • 2 medium tomatoes(peeled)
  • 4-5 garlic cloves
  • 1 tsp minced ginger
  • 1 green chilli pepper(remove the seeds)
  • 2 Tbsps chopped coriander
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp chilli powder
  • 1 tsp garam masala powder
  • 1 tsp coriander powder
  • 1 tsp black pepper
  • 2 chicken stocks (low salt)
  • 1-2 Tbs lemon juice
  • 4 cups Water
  • Instruction:

    Wash the daal few time then soak for 1-2 hours. After soaking wash it again, add daal and water to a pot and cook for 30-40 minutes. Add oil to a pot, add chopped onions, garlic, ginger, peeled chopped tomatoes, seedless chopped chilli pepper, spices and chicken stock. Then add cooked daal and mix well, bring it to boil, stir for few minutes, then cover it and cook over low heat for 1 hour, stir every 10-15 minutes. After 1 hour add chopped coriander and lemon juice, taste and add salt if needed. Stir and simmer for more 10 minutes then serve with bread or rice.

    Egg Pide

    Ingredients:

  • Egg pide (for 4)
  • Ingredients for dough
  • 2 cups flour (or more)
  • 1/4 cup milk powder
  • 1/2-3/4 cup warm water
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/4 cup oil
  • 1 Tbs yeast+1 tsp sugar+ 1/4 cup warm water( mix and cover for 10-15 minutes to activate)
  • Ingredients for sauce:

  • 3 tomatoes
  • 1 small onion
  • 1 bell pepper
  • 1 garlic clove
  • 4 Tbs olive oil
  • 2 Tbs tomato paste
  • 1/4 cup water
  • Dried oregano and basil, salt, black pepper
  • For topping:

  • Egg, mozzarlla cheese, parsley, green onion, thyme or oregano, black pepper
  • Some milk to brush around crust.
  • Instruction:

    Prepare yeast , mix dry ingredients, add activated yeast, then gradually add water and kneed, add oil, grease the bowl cover dough and keep in warm and dark place for almost 1 hour or until it is doubled in size. Mix and blend sauce ingredients, bring it to boil, make the heat low and simmer until thick. Dust flour on surface, roll out dough, place tray covered by baking sheet, add the toppings and shape it, brush with milk. Bake in preheated 250°c on middle rack, at last few minutes use top heat until golden brown.

    Shakshooka

    Ingredients:

  • 1 Tbs oil
  • 1 medium onion
  • 3 garlic cloves
  • 1/2 red bell pepper
  • 4-5 medium tomatoes
  • 2-4 eggs
  • 2 Tbs tomato paste
  • Salt, black pepper, chilli powder, paprika, coriander powder, chilli flakes, cumin powder
  • Some chopped parsley, black pepper and thyme powder for serving time.
  • Instruction:

    Add oil to pan, saute chopped onion, then add chopped bell pepper and garlic, then add tomato paste and spices, add tomato puree let it simmer till sauce is thickened. Add eggs, cover the pan and let eggs to cook for around 8 minutes, add black peppr, thyme powder and some chopped parsley then serve.

    Bruschetta

    Ingredients:

  • Baguette bread
  • Olive oil
  • Tomato
  • Basil
  • Feta cheese
  • Black pepper, oregano
  • Parmesan cheese
  • Instruction:

    Slice the bread, brush some olive oil on the both side and toast the bread in preheated 200°c oven. Rub garlic on hot bread. Mix chopped tomato, basil and feta cheese, add 1 Tbs olive oil, some black pepper and oregano. Add mixture on toasted bread, add some parmesan cheese and serve.

    Eggplant Fatteh

    Ingredients:

  • 2 big eggplants (cut in cubes and fried)
  • 2 medium potatoes(cut in cubes, fried with turmeric and salt)
  • 3 pita breads, cut and fry
  • 1/2 cup chopped parsley
  • Some pomegranate and sumac for garnish
  • Sauce ingredients:

  • 6 Tbs yogurt
  • 6 Tbs lime juice
  • 3 Tbs tahina
  • 3-4 Tbs olive oil
  • 2 minced garlic cloves
  • Salt and pepper
  • Instruction:

    Mix sauce ingredients well, then keep it in fridge. Fry potato, eggplant and pita bread separately. In a serving dish add some sauce, then add parsley, fried ingredients and add sauce intermittently on all layers. At the end add some pomegranate, more sauce, sumac and serve.
